I do a winter season CSA, and so our cover crop/dormant season is summer and we use two mixes. Either straight buckwheat if we will be planting real soon-buckwheat only needs about 30-45 days of growth to turn in and breaks down in a week- or a cowpea/sudan grass/ buckwheat mix. The CP/SG/BW mix is grown for 60-90 days, grazed or mowed, and turned under. It takes 2 to 3 weeks to break down if mowed, less if grazed.
