I particularly like the single round garlic that grows from the small bubles. It seems juicier and more flavorful than the mature heads of garlics, and it is very easy to peel and use. Sometimes they just fall off unnoticed from the head of garlic and appear as volunteers next season. We had a terrible gopher problem, and lost most of our garlic. The bubles saved the day for us!

You can grow from them, but it may take more than one year to get a full head of garlic (this first year is often a round). At least that is my experience with the ones on elephant garlic.

You can grow garlic from small cloves, but the size of the clove pretty much determines the size of the bulb it grows into. You will get a small bulb of garlic, but I love to plant the small ones for green garlic! I have a friend who borders her garlic bed with the small cloves to harvest early for green garlic. Have you ever used green garlic? It's great just chopped up (tender green stalk and all) with some salt and olive oil for dipping bread.
